yield: 1 gallon

  • 4lb clover honey (old, had to microwave to un-crystallize and was black in color.)
  • 1 cup raisins
  • 1tsp acid blend
  • 1tsp pectic enzyme
  • 1/4tsp grape tannin
  • Montrachet yeast

Mix all the ingredients in a 2 gallon bucket to make 1 gallon liquid. Add yeast.
